The Honey Chocolate Collection (S$88 for a Box of Eight) will incorporate raw and unprocessed Leatherwood Honey from the pristine rainforests of the Tarkine region in Tasmania, Australia - home to the world's cleanest air and water. The honey is cold-extracted to retain its flavour and gentle aromatic properties (unlike commercial honey) and this rare Tasmania Leatherwood honey is known to host a slew of health benefits. The Honey Chocolate Collection is a product of intensive research by Area Pastry Chef Hervé Potus - each one of these intricate mooncakes are infused with a mousse-like filling inside a chocolate shell.

For the traditional baked mooncake lovers, Master Chef Steven Ng of Shang Palace introduces three new flavours this year - Mini Baked Lychee Mooncake with Rose, Mini Baked Low Sugar Lotus Paste Mooncake with Macadamia Nuts and Mini Baked Mocha Mooncake with Hokkaido Milk. All these new creations will be in addition to the perennial favourites like the traditional baked lotus paste mooncake with the combination of salted egg yolks. The Shang Palace Four Treasures Baked Mooncake Gift Set (S$75) comprises of four regular baked mooncakes (one piece of each flavour) – White Lotus Seed Paste with Double Yolks, White Lotus Seed Paste with Single Yolk, Plain White Lotus Seed Paste and Mixed Nuts with Chicken Ham as well as the Plain White Lotus Seed Paste.
