The Basillissimo Dinner Menu at Basilico (located within Regent Singapore) is a year-long dining affair that features a different menu each quarter of the year as part of the three-course Basillissimo (The Best of Basilico) dinner - this includes an appetiser, an à la carte main course as well as a dessert buffet that you definitely have to leave some (stomach) space for. Much like my previous article, the images photographed here are tasting portions and they are in no way representative of the actual portions you will receive at the restaurant. Having explored the flavours of the Appenine Mountains and Adriatic Sea in quarter one and two respectively, Basilico Head Chef Luca Beccalli introduces new menu highlights from the Mediterranean Sea and the Alps this quarter three (July to September) and four (October to December).
Mediterraneo – Mediterranean Sea (05 July to 03 October 2016)
The culinary team at Basilico showcases the characteristic regional specialties of Southern Italy and the mountainous regions while tracing Mediterranean islands such as Sicily and Sardinia - diners will be treated to flavourful creations influenced by the regions along the Italian boot’s heel - Calabria, Basilicata and Puglia.
The first dish that I have sampled was the Cavatielli Pasta with Baby Cuttlefish, Mussels, Lentils, Aglio Olio and Bottarga - a simple dish that is sometimes used to introduce vegetables to picky children. Using a mix and selection of fresh seafood, the shape of the cavatielli pasta is also great for trapping the sauce and seafood in between bites. This dish also incorporates an Italian delicacy - the Bottarga which is a salted and cured fish roe that adds a different dimension to the overall flavours.
Diners will also be able to sample the special Palermo-style Swordfish with Vegetable Pinzimonio, Beetroot Purée and Fresh Herbs at Basilico this quarter.
Alpi - Alps (04 October to 31 December 2016)
For the last and final installation of the Basilissimo Dinner menu this year, enjoy flavours from the Alps (Northern Italy) from 04 October to 31 December 2016. I love the tender Sweet Chillidusted Lamb Loin with Artichokes, Sour Red Onions, Rosemary Crushed Potatoes and

Cheese-lovers will definitely fall in love with Chef Luca's Braised Beef Cheeks Cannelloni served over Light Parmesan Velouté.
