Known for her role in a Mediacorp drama, Jeanette Aw (who is personally a Peranakan as well) drew inspiration from her Peranakan heritage and her love for fairy tales to create an Oriental-Peranakan fusion menu with Wan Hao Chinese Restaurant. Some highlights from the menu include Braised Chicken with Buah Keluak and Blue Pea Flower Fried Rice with Egg White and Scallop, as well as Baked Lava Cake with Gula Melaka and Coconut Ice Cream.
Pornsak and The Line, Shangri-La Hotel,Singapore
Mediacorp TV personality, Pornsak, was inspired by his childhood memory of visiting “talad” or the local market in Thailand with his mother to pick out the sweetest pomelos. Pomelo and other traditional Thai ingredients will be featured in a special section at The Line’s renowned international buffet on Mondays and Wednesdays. Some dishes include Crab Meat with Pomelo Salad, as well as Barramundi with Green Peppercorn and Kaffir Lime.
Lennard Yeong and La Brezza, The St. Regis Singapore
Former MasterChef Asia finalist and self-taught home cook, Lennard Yeong is an up-and-coming Instagram influencer who prepares beautifully-plated,home-cooked food. An avid traveler, he draws inspiration from Japan and collaborated with La Brezza to create a unique Japanese-Italian menu. The menu includes Spaghetti, Vongole eSake, which pairs artisanal spaghetti “Rummo” with dry sake-drizzled vongole veraci, as well as Savoiardi al Thé Verdee Mascarpone, featuring lady finger biscuits soaked in green tea syrup, mascarpone mousse, sakura gel and macaron.
