Culinary Masters Series at Racines (Sofitel Singapore City Centre) to Feature Home Cook and High Profile Chef Collaborations

Racines at the Sofitel Singapore City Centre will be presenting the Culinary Masters Series which will feature a diverse lineup of high profile chefs and home cooks. In celebration of epicurean heritage, the series promises to redefine dining experiences and it will kick off in July 2019 with the second generation owners of Da Dong Prawn Noodles in a showcase of local hawker culture.

For the month of July, look forward to set lunches featuring local hawker fare at Racines. On Tuesdays, Watson Lim and his team from Da Dong Prawn Noodles will be serving their signature bowl of prawn noodles. A recipe perfected by his father since 1966, the deceptively simple prawn noodles is famed for its well-balanced broth and has received its stamp of approval from locals. Light yet flavourful, each mouthful of vermicelli is soaked in its sumptuous goodness alongside fresh tiger prawns. A generous sprinkling of crispy pork lard, spring onions and bean sprouts complete the dish.

Racines’ very own Executive Chinese Chef Andrew Chong takes over for the remainder of the week, offering a bevy of his own local specialties. Chef Andrew’s rendition of Bak Kut Teh, a staple of Singapore’s hawker scene, punctuates his repertoire. Pork ribs are braised in fragrant white pepper and Chinese herbs with tender chunks of meat falling right off the bone. The heart-warming dish is served alongside homemade “you tiao” dough fritters and steamed rice topped with fried shallots. Chef Andrew will also be putting forth a classic Singapore-style Oyster Omelette served alongside lip-smacking dried chili paste.

With the launch of the Culinary Masters Series, Racines seeks to highlight a shared culinary heritage that is passed down and perfected over generations. Learning the ropes of their craft from their respective fathers, both Watson Lim and Chef Andrew Chong have developed into masters in their own right and made their mark on Singapore’s ever evolving culinary scene while staying true to their families’ original recipes. Speaking about the collaboration, Watson had a special message for diners, “It’s fantastic to be showcasing hawker food at such a location and it is something definitely worth experiencing. So come down and give it a try!”

Racines offers diners a 2 or 3 Course Set Lunch Menu inclusive of Nespresso Coffee or TWG Tea at S$30++/S$38++ respectively. Available from Monday to Saturday, this value-for-money set lunch provides diners with an evolving menu of French-inspired and Chinese delectable options which are updated each month.
