The season for hairy crabs (more intimately known as Da Zha Xie or Chinese mitten crabs) which are famous for their delicious golden roe is here! From now until 16 November 2014, enjoy a selection of dishes at Hai Tien Lo (海天楼) that are based on this prized delicacy. Executive Chef Lai Tong Ping (黎东平) has crafted a selection of six a la carte items and a six-course prix fixe menu featuring the best of this delicacy.
Hairy crabs, known for their delicate and succulent meat and rich creamy roe, are best paired with fresh ginger tea or wine to enliven the natural flavours. Chef Lai has based his creations on these decadent crustaceans to showcase the finest elements – the meat and roe. Delight in the handcrafted Braised Bean Curd with Pine Mushrooms, Hairy Crab Meat and Crab Roe as the melting consistency of the bean curd is complemented by succulent crab meat. Guests can also relish Steamed Whole Hairy Crab with Perilla Leaves to enjoy the sweet and delicate meat of the crustacean. For a lighter option, tantalise the palate with a Steamed Minced Pork Dumpling with Hairy Crab Meat and Roe. The paper thin and delicate package is a burst of flavour with the aromatic soup and silky crab meat. This refined creation is further enhanced with the luscious golden crab roe that gives an added texture and richness to the dish.
In addition to the a la carte items, Chef Lai also presents an indulgent tasting menu where each of the six courses showcases a different preparation of hairy crab. Chef Lai seeks to retain the natural sweet flavour of the meat while achieving a delicate balance of flavours with the other elements of the dishes. Highlights include Lobster with Hairy Crab Meat and Crab Roe in Thick Broth and Pan-fried Sliced Grouper Fish with Crab Meat, Crab Roe and Minced Pork.
From now until 16 November, guests can enjoy these exquisite dishes during lunch and dinner at Hai Tien Lo. The six-course prix fixe menu is priced at $168++ per person, with a minimum of two diners required and a la carte items start from $6.20++ per serving.
