Checking out the Brand New Colony Restaurant (The Ritz-Carlton, Millenia Singapore)
Last month, I wrote about the exciting news that a brand new restaurant concept was coming to The Ritz-Carlton, Millenia Singapore (in place of the previous Greenhouse Restaurant). For those of you who have been following me on Instagram (@theshutterwhale), you must have seen the amazing spread and decor that the place has. I was invited to Colony's Official Launch Party last week and was blown away the moment I stepped in.

Following a five month transformation, the brand new Colony features design inspirations that is prevalent across British and the East Indies region. I really like the contrast between the use of natural light and the warm lighting indoors. If you are here for breakfast or lunch, I will highly recommend getting a table by the tall glass windows.

The restaurant seats 260 diners very comfortably and this is also where the breakfast buffet is served for in-house guests (much like the previous Greenhouse restaurant). The dynamic space within Colony is easy customisable and it can be configured to accommodate different groups and sizes. In addition to breakfast, Colony will also offer lunch, afternoon tea and dinner daily. On Sundays, vintage Champagne brunch is served for extra indulgence.
Dining Area

There are eight different conservatory kitchens at Colony - each featuring the culinary journey and heritage that helped shaped Singapore. The 'live' kitchens will also feature the best of Chinese, Indian, Indonesian, Malaysian, Western and local cuisine to take your tastebuds on a gastronomical journey.
Fresh Sashimi

The Ice Bar will feature a selection of fresh crustaceans on ice, salads, cold cuts and cheeses. While we were there, sashimi and sushi were also served.
Langoustines on Ice

I'm not sure if this is going to be a permanent fixture or was it simply for the launch party only but I have never seen so many langoustines on ice before. Other fresh seafood may include king crab legs, black mussels, poached prawns and half shell scallops.
The Grill & Rotisserie

Asian Meats

The Grill & Rotisserie will feature the best of Western and Asian meats that are grilled (or roasted) to perfection. I particularly like the beef wellington which is by far the best one I have ever in a buffet ever. The truffle sauce was a little underwhelming but that beef that is enveloped within sheets of fresh pastry was just perfectly cooked!
The Wok

The Wok is where you are going to find local wok-fried delicacies like the iconic (and world-renowned) Singapore chilli crab as well as other dishes like crayfish and seafood fried rice. It is also located next to The Tandoor where you will be able to choose from an array of freshly cooked Indian meats, seafood and breads made in a traditional Tandoor oven (i.e. naans).
Bread Station

If you aren't satisfied with the number of carbohydrates available, choose from a selection of freshly-baked breads and olive oils. In the morning, The Bakery will house a generous selection of breads, pastries and sandwiches for your enjoyment. Be sure to check out The Upper Crust - a pastry creation that comprises of a cookie crust and a muffin base.

For those with a sweet tooth, check out The Patisserie for a vast selection of sweet treats. It doesn't matter whether you are interested in the assorted Nonya chess, artisan tea chocolates, ice-cream flavours or the stunning display of desserts, Colony will definitely be able to satisfy your craving.
