The Black Truffle Yu Sheng with Deep Sea Red Crab, Silver Bait Fish and Fresh Fruits from Man Fu Yuan this year has got to be one of the most beautiful ones that I have seen for 2017. Also, many hotels seem to have continued staying away from using raw salmon this year due to the scare in 2016.
This beautifully-presented Chilled Marinated South African Fresh Abalone in Half Shell with Goma Sesame Sake Dressing was served on top of a cubical block of ice (this is not the usual presentation).
The Double-boiled Chicken, Fish Maw, Bamboo Pith and Korean Ginseng in Superior Stock had to be one of my favourite dishes that night - it was robust and hearty with an added natural sweetness from the Korean Ginseng. The fish maw is believed to have beauty-enhancing purposes and the bamboo pith provides this delicious soup with that added crunch and texture. I absolutely loved how delicious this soup was!
Another interesting dish served this year was the Steamed Boston Lobster with Egg White and Chinese Rice Wine Consomme - it was also topped with delicious pork lard which provided the dish with more texture and flavours.
Consistent to the quality throughout the years, Man Fu Yuan Supreme Treasure Pot is a dish to look forward to each year. Filled with luxurious ingredients like the 10-Head Whole Abalone, Spring Chicken stuffed with Aged Hua Tiao Wine and Pearl Rice, Spiky Sea Cucumber, Fish Maw, Canadian Lobster, Goose Web, Deep Sea Red Crab, Dried Oyster, Australian Scallops, Live Prawns, American Sea Whelk, Flower Mushrooms, Cabbage, Fried Bean Curd Skin, Fried Yam, Preserved Meat, Liver Sausages and Sea Moss, this treasure pot feeds up to 5 hungry adults and is also available for takeaway - early bird discount of 20% applies so be sure to order before 20 January 2017.
The most amazing dish in my opinion has to be the Barbecued Whole Suckling Pig with Glutinous Rice (also available for takeaway!) - this perennial favourite is perfection in every bite (and also how suckling pig should be served!). That crispy skin alongside deliciously-flavoured meat is immensely satisfying!
