Flavours of India at MELT ~ The World Café (Mandarin Oriental, Singapore)
MELT ~ The World Café is one of my favourite hotel buffets in Singapore. On Sundays, it offers a luxurious Champagne Brunch experience and from time to time, they feature special chefs and quality restaurants from around the region. From 16-31 October 2015, MELT ~ The World Café will showcase Indian Specialty Chef Santosh Kumar's creations at this exciting venue.
While the restaurant is already well-known for the selection and quality of Indian food amongst frequent diners, this special dining occasion will transform one of the live cooking stations into a chaat counter which will serve up savoury snacks like the Shakarkandi ki Chaat and Ragda Pattice. Enjoy a refreshing Paneer Tamatar salad which is combination of fresh tomatoes and cottage cheese. For one night only (28 October 2015), indulge in an exquisite set dinner of traditional Indian cuisine paired with the fine wines of Craggy Range.
Highlights not to be missed at this special dining occasion include:
- Tandoori Chicken Roulade
- Lagan Ki Chop
- Tandoori Gobhi
- Fish Balchao
- Assorted Naans
For a sweet finish, indulge in the classic Kala Jamun - a dark brown sweet dumpling. Other desserts include the Rabri Falooda (chilled cardamom-scented drink topped with vermicelli noodles) and the Gajerela Carrot Pudding.

There is a new Hyatt Place opening in Bangkok - Hyatt Place Bangkok Sukhumvit 1 (not to be confused with the Hyatt Place Bangkok Sukhumvit near Phrom Phong) - and it has already started to accept stay reservations from 13 January 2025.
